About the Vineyard and Grapes
The vineyard is located 15 km south-west from Santa Cruz, Colchagua. The area is known as “Panama Valley” which is characterized by a microclimate that differentiates it from the nearby regions.
The grapes destined for this blend were selected from pruning time, controlling the yields in everyone.
These grapes are located on gentle slopes in the vineyard where we selected homogeneity overgrowth. The soils dominate clays, with some strata giving greater strength and expression to the wine.
During the winter of 2015, they registered 533 mm of rain. A normal spring, no delays in blossoms, and rain-free conditions maintain good sanity.
Some heavy rains were registered during April, but the good sanity and harvest time help to prevent any bad condition. March was very warm, producing a slight advance in the harvest helping prevent any botrytis in April.
As a result, we achieve good aromatic expressions and tannic structure. Our grapes are picked and destemmed by hand, in a process that does not take more than 5 hours. The fermentation process is working spontaneously only, with no commercial yeast. The fermentation takes place in small containers (800 kg capacity), taking about 15 to 20 days to end the alcoholic fermentation.
Once the alcoholic fermentation has ended we move the wine, by gravity, to used barrels where they are kept for 23 months. The malolactic fermentation is done in French barrels and then moved at least twice for cleaning. We keep the wine in used french barrels (2, 3, and 4 times) for aging. No filtration is required.
