To use Phyllo sheets, place one sheet on a clean work surface and coat it with cooking spray. Make sure the Phyllo sheets are completely thawed to room temperature. You can also use melted butter, but cooking spray decreases the chances of tearing. Make sure you can work fast and that your other ingredients aren’t too wet!
