I almost didn't try due to the other reviews, but I'm glad I did. I'm not a do it yourself person so I had no desire to make ricotta. It does have a sweet taste to it but nothing over powering. Used it in vegan lasagna and it tasted just fine. Will use again with no hesitation.
Tried this to make a spinach lasagna. I mixed it with a vegan shredded mozarella and fresh parsley and lots of garlic. I used this delicious concoction for 2 of my lasagna layers. My omnivore BF still dreams about that lasagna. Mind you, a spoonful of it out of the tub is not so good but neither (IMO) is the shredded vegan cheeses. Many of these faux dairy cheeses must be melted. So grateful this product exists!
You need to COOK with it!!! Warm, in a recipe, it is brilliant. In/over pasta, warmed in pastry: with added sweetener such as agave or spice such as freshly ground organic mixed pepper or on its own, it is marvelous. The taste and texture are wonderful. It does not taste wonderful spooned right from the container -- it needs work! Used in cooking, though, it is grand. Folks who just spooned it out of the container and dismissed it out of hand missed a good thing, showed lack of imagination, wasted brain-power and, really did a disservice to a fine product. Warm and bubbling in pasta I cannot stop eating this ricotta. It is delicious. Over (vegan) waffles with a touch of agave syrup or some fresh berries it is scrumptious, Listen up!
While Tofutti's Cream Cheese and Sour Cream taste spot on right from the package, this does not. You need to cook this, and then it is awesome!! Try the recipe on the package for Alfredo or use in Lasagna.
Don't eat it straight, it's too dry for that, but mixed into a pasta bake with sauce it was delightful, tasted like the real deal!
