Bob's Red Mill Vital Wheat Gluten is GMO-free, and made form the protein found in the endosperm of the wheat berry.  When combined with water, it becomes highly elastic and taffy-like.  It makes an amazing meat substitute (seitan) that can be seasoned and flavored as needed to replace beef, pork, chicken and more.  It can also be added to bread dough to help retain the gas and steam from baking to give more volume to baked breads, too!
