A surprisingly refreshing Cab for such dark notes, this wine is perfectly balanced. Tons of warm spices - anise, cardamom, and cinnamon with aromas of black pepper, coffee, and dark chocolate. Bright blueberry, pomegranate, and fresh raspberry hold the middle as all notes form one flavor through to a very long finish that whispers red paprika.
Ceniciento is produced in the dry coastal area of Maule, Cauquenes, Chile. Coming from 20 year-old vines on a trellis system. This vineyard, owned by the Guzman Family, is settled on granite soil with a high presence of quartz located 35 kilometers away from the coast.
This terroir represents the expression of strain in its splendor. The grapes were sourced in the second week of April when they reached their optimum phenolic maturity. The grapes were then destemmed and sorted, and part of the grapes are slightly cracked to subtly release their juice. Fermentation begins with cold maceration of 3 days to slow down the beginning of the alcoholic fermentation. The alcoholic fermentation is carried out with wild yeast, we made soft pump-overs to homogenize the contents. Temperatures are controlled so it reaches no more than 24-25°. Once the alcoholic fermentation is done, skins, seeds, and wine are kept for an extra 8 days. The free run and pressing wine were blended and then aged in fifth-use French oak barrels for 12 months.

Moretta is a female winemaking team who met in winemaking school. After graduating from university with their degrees in winemaking and agronomy, they went their separate ways, working over the next 5 years for both boutique and commercial vineyards all over the world. When they had the chance to work together again in Chile, they started plans to launch their own project, which became Moretta. The name Moretta comes from the French word for a Venetian mask that the girls found to be the epitome of feminine elegance. The wearer of the mask had to remain silent while wearing the mask because it stayed in place by the wearer biting a nub of wood or mother-of-pearl on the inside of the mask, which made the energy of the wearer take the focus. The women are passionate about making wine that shines with integrity, authenticity, and power, traits they also feel reflect the ideal modern woman.
